    素蛋黄里的红萝卜泥也可以先炒至干身后才加入。

    Step 1

    素蛋黃做法For mock egg yolk: 1.把浸好的绿豆片滤去水份,蒸30分钟后压成泥;红萝卜蒸熟压成泥。Steam green bean split for 30 minutes until cooked,then mash it; steam carrot and also mash it.

    Step 2

    2.烧热1½大匙油煮溶芝士加入所有素蛋黄材料,炒至不粘锅后,分成12份搓圆即成素蛋黄。.Stir fry all filling ingredients A in low heat until they do not stick to wok,apportion to 12 equal portions.

    Step 3

    3.把南瓜仁加入莲蓉分出每份130克,每份莲蓉放入素蛋黄搓圆备用。Apportion filling B into 130g each,then wrap each with mock egg yolk.

    Step 4

    月饼做法Method for skin: 1.将红糟皮材料A拌匀放置6小时后加入材料B,拌匀后再休面团1½小时左右,分出40克等份备用。Blend ingredients A well and rest for 6 hours,then mixes in ingredients B and knead into dough,let rise for 1½hour,and then apportion into 40g each.

    Step 5

    2.将一份饼皮压平包入1份莲蓉馅料搓圆,以月饼模按压敲出。Flatten each portion of dough and wrap with filling, press into mooncake mould and dislodge.

    Step 6

    3.放入预热烤炉190℃烘10分钟,取出待解温刷上淡奶,再烘10分钟即可。Put into pre-heated oven at 190℃ and bake for 10 minutes,remove from oven,brush with evaporated milk and continue bake for another 10 minutes,done.
